The name cranberry derives from ‘craneberry’, so called because the early American settlers likened their appearance to the neck, head and bill of a crane. Cranberries have become an increasingly popular ingredient in the bakery trade as an alternative to sultanas and raisins, and are also widely used as a snacking product.
We can offer dried cranberries from the USA, which are available in whole, halves, and pieces, which are generally sweetened.
Desiccated CoconutDesiccated coconut is coconut meat which has been flaked and then dried to remove as much moisture as possible. Mixed PeelMixed peel is a traditional ingredient for a whole variety of bakery products, including popular lines such as hot cross buns and fruit cake. We are able to offer double and single cut mixed peel (orange and lemon) in either bulk 10kg cartons, pre-packed 6 x 1kg, or in retail pots – either 500g or 1kg.
Glacé CherriesThe finest glace cherries come from Provence in France, with the centre of production, the town of Apt, set in the Lubéron. Glacé cherries were only discovered by the British in the second half of the nineteenth century, and amongst these travellers was one Matthew Wood, who returned to England with samples for his family and friends. They were such a success that he began importing the cherries, and they soon became a vital ingredient in the Great British fruit cake.
We are able to offer the traditional red glacé cherry, as well as the natural coloured variety, in both wholes and halves, and in a variety of sizes and packs.
