Tree Fruit


Dried figs are thought to be one of the first fruits cultivated and originate from Asia Minor. Turkey is the major producer of dried figs and the soil and climate produce the finest dried figs in the world. There are both male and female fig trees and in order for caprification to take place a wasp has to fertilise the female fig and crawls inside the fruit. The different varieties of figs range in colour from nearly black to almost white and only the female fruits are edible. The green varieties are normally reserved for drying.

Quality Dates


The date palm, on which dates grow, is thought to originate from the North African deserts. The fruit grown in rich red to golden bunches that weigh up to 20lbs each containing up to 200 dates. There are usually 12-15 bunches per tree and both female and male date palms flower at the end of February. The flower of the male tree is sweet and is eaten locally as bread. That of the female is bitter, but it is only the female flower that bears fruit. Dates are classified into three types; soft, semi-soft and dried, according to the softness of the fruit. The most common variety available is deglet nour which is semi-soft.

Dried Prunes


A prune is a rich, dark, dried plum available whole or pitted. Only dried plums are called prunes. The Santa Clara valley has been the home of the American prune for many years but the increased value of land has moved US prune cultivation to the San Jose and Sacramento valleys. The Agen region of France produces some of the finest dessert prunes. Potassium sorbet is traditionally used as a preservative.

Dried Apricots


Apricots originate from China and was brought to the West by Alexander the Great. Turkey is the main supplier of dried apricots for the UK market. Dried apricots are also produced in USA and South Africa, as well as Iran. Dried apricots are typically treated with sulphur dioxide as to preserve the fruit. This also has the effect of creating the orange colour. They are also available as ‘natural’ apricots but have a dark brown appearance.
